We’re Brittany and Brennan Grosvenor.

We met after college while living in downtown Chicago, but our roots are in the northwest suburbs: Crystal Lake and Algonquin, where square-cut pizza was just part of growing up.

After moving to Oregon, we brought that love for Chicago tavern-style pizza and Midwestern food with us. What started as a food trailer three years ago has grown into PROOF, a Midwest-inspired restaurant built around good food, cold drinks, Chicago sports, and a place that feels easy to settle into.

Along the way, our dog West (GSP/Lab Mix) was part of the ride, and now Olive, our field golden retriever, is too.

PROOF is our way of sharing the food and hospitality we grew up with; approachable, familiar, and rooted in the styles you’d find around Chicago and the Midwest - with the PNW community.
